NAME: VERDICCHIO DEI CASTELLI DI JESI CLASSICO D.O.C.

PRODUCTION AREA: It is located in the district comprising the hills in the heart of the province of Ancona, and in small part, few areas of the province of Macerata. The wines produced in the oldest original area, the Castelli di Jesi, are marked as “Classico”.

VINE VARIETY: It is obtained from the Verdicchio dei Castelli di Jesi Classico D.O.C. grape variety. Other authorised white wine grape varieties, can be added up to a maximum of 15%.

ELEVATION: 250 Meters above sea level.

SOIL: Clay, medium loose.

AGE OF VINEYARDS: 15 years.

VINE TRAINING: Guyot.

MAXIMUM YIELD: 100 q/ha.

NUMBER OF PRODUCED BOTTLES: 8000.

MATURATION: 8 months in stainless steal barrels.

MATURATION IN BOTTLES: 6 months.

APPEARANCE: Straw yellow colour, with green shimmers that turn golden after maturation.

BOUQUET AND TASTE: Delicate, fresh and persistent fragrance of fruit and flowers. Hints of bitter almonds. Dry taste, fine, harmonic, with a pleasant bitter aftertaste.

ALCOHOL CONTENT: 13%vol.

GOBLET AND SERVICE: A colorless semi-oval shaped glass, with thin edge and a slender stem, exalts the flavours of the wine. Serve at a temperature of 10°-12° C.

FOOD PAIRINGS: It can be paired with all the dishes of the Mediterranean cuisine: starters, white meat, boiled meat, mushrooms, truffles and fried vegetables. Excellent with fish-based dishes.
